1. 16 ounces scungilli, sliced, blanched and chilled
2. 2 stalks celery, chopped
3. 1/2 cup red onions, chopped
4. 2 tablespoons chopped Italian parsley
5. 6 ounces pitted black olives
6. 4 tablespoons of your best olive oil
7. 2 lemons, juiced and strained
8. 1 teaspoon sea salt
9. 1/4 teaspoon freshly ground black pepper
10. red pepper flakes to taste
11. 4 garlic cloves, chopped finely
